A Special Holiday Treat…Chocolate Truffles…Hmmm

trufflesDo you love chocolate?  Then, how about a special holiday treat of chocolate truffles?  Yes, they can be very expensive so make them yourself.   Just follow this simple recipe (shock your friends) and enjoy!

1/3 cup heavy cream

6 oz. very finely chopped dark (semi- or bittersweet) chocolate

2 tbsp very soft butter

Cocoa powder (unsweetened)

Step 1 - Bring cream to a boil.  Pour it over the chocolate.  After about 60 seconds whisk the mixture until it is very smooth and shiny.  Add the butter, whisking it completely into the mixture.  Cover and refrigerate until firm;  2 3/4 to 3 hours.

Step 2 - Scoop out teaspoonfuls of chocolate.  Roll until you form balls about the size of a cherry.  Make sure the chocolate is not too hard to shape.  If so, leave for about 15 minutes longer, then shape.

Step 3 - Have cocoa ready in a bowl.  Roll the truffles around in the cocoa.  Shake off excess cocoa.  Cover and refrigerate until ready to serve.

Makes approximately 20 to 24 truffles.
